Pepper-Seared Sea Scallops

  This recipe is fast and simple to make yet is quite elegant. 

20 sea scallops

1 teaspoon canola oil

Coarsely cracked black pepper

Salt

  Rinse the scallops and pat dry between paper towels. Warm the oil in a large no-stick frying pan over medium-high heat. Coat the scallops with the pepper and salt to taste. Add to the pan and cook for 3 to 5 minutes on each side, being careful to neither overcook nor undercook. Serve immediately. Preparation and cooking time: 15 minutes. 

Yield: Serves 4; Per serving: 72 calories, 1.7 g. total fat (22% of calories), 0.7 g. monounsaturated fat, 0.5 g. polyunsaturated fat, 0.1 g. saturated fat, 11.9 g. protein, 1.7 g. carbohydrate, 0 g. dietary fiber, 23 mg. cholesterol, 114 mg. sodium.
